摘要：Shortening systems are prepared which include hydrogenated edible oils thatare hydrogenated in a manner to minimize the formation of trans-stereoisomers. Aconditioned catalyst is used which disfavors trans-stereoisomer formation withoutsignificantly negatively impacting the length of time required to form solids for a usefulshortening base stock through hydrogenation. Preferred conditioning agents are organicacid phosphates and phosphoric acid. In a preferred embodiment, a confectionaryshortening is provided which incorporates a polyglycerol ester emulsifier.
